Fun class

Just came out from my principle of food science class.
We learned about lipids today ~ the types, properties and function of lipids.
Sounds boring?
But, it's NOT!
It is such a fun course.
I learned so many REAL LIFE applications of sugars, proteins, lipids etc in food.

For example,
Do you know why we ask Malic Acid when we made jello?
Do you know there are always a white coating on the chocolates if we put them in the refrigerator?
Do you know what kinds of starch can form a better gel?
Do you know how to make the angle cake as white as snow?

The things learned there are so "live", and definitely useful if we wanna be a chef or a food scientists :)

Today, Dr. S "transformed" us into fatty acid just to show us how fat crystals can transform form
various forms and have different packings! It's so funny! I felt like I'm in the Food Network "Good Eats" show :D

Oh my, I'm truly, deeply, madly fall in love with food science :)
